Trevor Knotts started working in restaurants in middle school in North Carolina at Gregory's Bistro and The Millennium Center. After moving to Richmond in 2003 he worked for Kevin LaCivita at Pomegranate. In 2007 he took his first executive position for Todd Manley at Pescados China Street. After that he joined Richmond restaurant group as the executive chef to open the daily in Carytown. He then rejoined LaCivita to open the new Pomegranate in Carytown. In 2014 he joined Luray Bucholtz and Dave Al-Attiyah as the chef to open The Betty on Davis. Last year he reconnected with RRG to take the helm to rebrand Water Coastal kitchen into East Coast Provisions.
